Japanese Sake in the Western Tokyo

Good 'water and rice' are essential elements in sake making.

Water is also essential in whisky making, but it is essential for sake, as water accounts for about 80% of the ingredients.

Ten sake breweries are in the Tokyo metropolis, and five are concentrated in the Nishitama area.

Why do five sake breweries exist on the western outskirts of Tokyo? It is because the Nishitama area has clean, mellow water available.

Trivia about Tokyo

The Bureau of Waterworks of the Tokyo Metropolitan Government has managed the water source forest for more than 100 years. The area is equivalent to 10% of the total area of Tokyo. It extends from the western Tama area of Tokyo to Yamanashi Prefecture. Although Tokyo is often associated with skyscrapers, this is the largest area of forest owned by a water utility in Japan.
